Meet Our Current Cider Selection

SPARKLING HONEYCRISP ROSÉ

A handcrafted cider from heirloom, New York State grown apples. Each batch begins with carefully selected fruit, fermented dry and aged for months to build depth and nuance. We then infuse the cider with pressed Riesling and Pinot Noir grape skins, adding a natural blush of color and subtle tannic structure that echoes winemaking tradition. The final touch is fresh-pressed Honeycrisp juice, introduced late in the process to bring bright, genuine sweetness and crisp apple aroma. The result is a balanced, terroir-driven cider that tells the story of its orchard origins and artisanal production at every sip.

PORTER’S GOLD

A dry, traditional-method cider made from a balanced blend of New York State apples. Gently pressed and slowly fermented, the cider undergoes secondary fermentation in the bottle to produce fine, effervescent bubbles.

Aged in French oak, the barrels add subtle vanilla, a hint of toasted almond, and soft tannins that enhance texture without masking the fruit. Hand-disgorged and uncompromisingly dry, it offers crisp apple acidity up front, mid-palate subtle oak, and a clean, mineral finish.

Bright, bone-dry, and well balanced, it shows orchard fruit, gentle spice, and restrained oak. Serve chilled.
